Receta con sabor a Semana Santa
Una vez más el plátano ocupa un importante lugar dentro de nuestra gastronomía. Esta vez reboza el filete de pescado fresco, agregando su sabor y crujiente textura a cada bocado. Nuestro querido tamarindo, de Azua, aporta su característico e insuperable sabor, para lograr la perfecta unión entre lo ácido, dulce y salado.
Para la sopa de tamarindo:
1 taza de jugo de tamarindo
1/2 taza de azúcar crema
3/4 taza de vino blanco
3/4 taza de leche de coco
1 rama de cilantro
Para el cremoso:
2 cucharadas de queso crema
2 cucharadas de mayonesa
4 aceitunas negras, picaditas
4 aceitunas verdes, picaditas
Para el pescado:
2 filetes de mero
Basa (1/2 lb. c/u)
Sal y pimienta al gusto
3/4 taza de pan rallado
2 plátanos fritos, picaditos
1 taza de harina de trigo
5 huevos, batidos
1 taza de Aceite Crisol Ligero
Para la sopa de tamarindo:
Coloque todos los ingredientes en una olla a fuego medio, hasta que se reduzca y se obtenga una textura espesa. Ajuste de sal, si es necesario. Retire y reserve.
Para el cremoso:
Mezcle el queso con la mayonesa y aceitunas picaditas. Lleve a la nevera hasta utilizar.
Para el pescado:
Sazone el pescado con sal y pimienta.
Mezcle el pan rallado con los plátanos fritos triturados y reserve. Pase los filetes de pescado por la harina de trigo, luego por el huevo batido, nuevamente por la harina, otra vez por el huevo y más tarde por la mezcla de plátano. Caliente el Aceite Crisol a fuego alto y fría los filetes de pescado rebozados hasta que estén doraditos. Retire a papel toalla.
Divida la sopa en dos platos, coloque encima los filetes de pescado frito y tope con el cremoso haciendo forma de quenelle con dos cucharas.
